Ageing Beef.?? How long for?

I have bought a whole rump of beef (6.550 kilos) and it is in one of those vacuumed sealed bags (cryovac) I bought it on the 30th of July and it says best before the 6th of August but i am wanting to age it as an experiment as i have never tried doing this.I have it in the bottom of the refridgerator and trying the wet ageing method while it is still in the bag.I did read a method called dry ageing where you take it out of the bag and wrap it in cloth such as tea towels but it says you lose some of the meat as you have to cut the greyish outside layers off.Have any of you tried aging beef and can i go past the 6th of August or what signs am i looking for to tell me its aged enough ??.
