What kind of animal is this?

Apparently this is a Chinese delicacy. From what the Chinese lady told me this animal is found in the water and she told me it was a type of fish. However it had a hard shell, a paw with claws, and developed organs/intestines like a warm blooded animal. I ask if it was a turtle or alligator but she said no. Any hints as to what kind of animal this is?
